Yes you can, I have the M520 pedals on my mountain and road bike. Most people that don’t race use mountain bike shoes and pedals it’s just easier to walk around in.

Q&A: GT Force 2.0 Clipless Pedals?
Yes they will. As long as they’re both using the SPD shoes, they are compatible. My first clipless pedals on a road bike were those same ones and they did well. The only problem I ever had was one of the hex screws for the tension became stripped, so I ended up using only one side of the pedal. Not a big deal since most road pedals are one-sided anyway.
Yes you can do this just fine. I use a Crank Brothers candy C on my road bike and a CB Acid 2 on my mtn bikes and it works just like your Shimano pedals …..perfect!
Yes many touring riders do it to be able to get off the bike and walk around easily instead of all funny like on road bike cleats. My training bike has them for harsh weather and for cyclo-cross.
You could choose any pedal that fits a SPD style cleat. Good luck!
